  • 4 cups apple juice Freshly pressed if possible
  • 1/4 cup lemon juice Brightens flavor and aids preservation
  • 1.75 oz fruit pectin Like Sure-Jell
  • 5 cups granulated sugar
  • 1 pinch cinnamon Optional for extra flavor

Preparation

  • Sterilize your jars and lids in boiling water to ensure food safety.
  • If using fresh apples, wash and juice them to obtain 4 cups of apple juice. Strain if desired for a smoother jelly.
  • In a large pot, combine the apple juice and lemon juice.
  • Sprinkle in the fruit pectin while whisking, then bring the mixture to a rolling boil over medium-high heat.
  • Add sugar all at once once boiling, stirring until dissolved and boiling for 1-2 minutes.
  • Perform the spoon test to check if the jelly is ready.
  • Pour the jelly into sterilized jars, leaving 1/4 inch of headspace, and screw on the lids.
  • Let the jelly cool at room temperature for 24 hours before refrigerating.

Notes

Add a pinch of cinnamon or vanilla for a flavor twist! If the jelly doesn't set, reheat and add more pectin.
