  • 4 cups fresh pineapple, chopped Make sure it’s ripe for optimal sweetness!
  • 1/4 cup sugar You can adjust this based on your sweetness preference.
  • 1 tablespoon lime juice To brighten the flavors.

Preparation

  • Start by chopping your fresh pineapple into small pieces.
  • Toss the chopped pineapple into a blender or food processor, along with the sugar and lime juice.
  • Blend until the mixture is smooth and creamy.
  • Pour the blended mixture into a shallow dish and spread it out evenly.
  • Pop it in the freezer for about 2-3 hours, or until it’s firm enough to scoop.
  • Once it’s frozen, remove it from the freezer and allow it to sit at room temperature for about 5 minutes to soften slightly.
  • Scoop it into bowls, and feel free to garnish with some fresh mint leaves.

Notes

Taste test and adjust sweetness before freezing. Experiment by adding coconut milk for creaminess or other fruits. Store leftovers in an airtight container in the freezer for about a week.
